“The more you learn, the more questions you have”.  This session, suitable for all winemakers, was requested by the experienced winemakers.  Some of the issues which will be discussed include:  Stuck fermentation; Yeast selection, Tannin additives; Stabilization; dealing with high acidity in hybrid grapes; special treatment of mechanically harvested fruit; ph stability; and more.
